Ingredients
200g Shortbread
110g melted butter
50g sugar
350g cream cheese
280ml whipped cream
500g apricots or and other fruit
Method
Crush the shortbread into small pieces and add the melted butter in a bowl and stir to combine.
Stir until the mixture resembles breadcrumbs.
Spoon the mixture into a cake tin and press it down firmly and evenly with a metal spoon to create the cheesecake base.
Let the base cool in the fridge until the base sticks together perfectly.
While the base is resting, make the cheesecake filling by mixing cream cheese, whipped cream and sugar.
Spoon the filling and spread it evenly on top of the base and refrigerate overnight to chill.
Top the cheesecake with apricots and serve.
I have to say: I never actually made a cheesecake before but this recipe is delish! I promise.
It's definitely worth a try. Aaand you don't even need an oven :)
