Cheesecake dream



Ingredients

200g Shortbread

110g melted butter


50g sugar

350g cream cheese

280ml whipped cream


500g apricots or and other fruit


 

Method

  • Crush the shortbread into small pieces and add the melted butter in a bowl and stir to combine.



  • Stir until the mixture resembles breadcrumbs.

  • Spoon the mixture into a cake tin and press it down firmly and evenly with a metal spoon to create the cheesecake base.

  • Let the base cool in the fridge until the base sticks together perfectly.

  • While the base is resting, make the cheesecake filling by mixing cream cheese, whipped cream and sugar.

  • Spoon the filling and spread it evenly on top of the base and refrigerate overnight to chill.



  • Top the cheesecake with apricots and serve.



I have to say: I never actually made a cheesecake before but this recipe is delish! I promise.

It's definitely worth a try. Aaand you don't even need an oven :)
