Cute Paschal Lamb

Preparation time: 20 min. | + 40 min. baking time | +70 min. cooling time


Ingredients (one paschal lamb -1 litre):

> 3 eggs (middle sized)

> 100 g icing sugar

> 1 pinch salt

> lemon zest from one lemon

> 125 g neutral plant oil

> 125 g egg liqueur or whipped cream

> 200 g wheat flour

> ½ package baking powder

> butter and flour for the baking-tin

> icing sugar to dust


Step 1: Preheat the oven to 170 degrees, then butter and flour the paschal lamb shaped baking-tin.


Step 2: For the dough:

Beat eggs, icing sugar, salt and lemon zest for about 10 min. until fluffy. Then add oil and egg liqueur or whipped cream (whatever you prefer) whilst mixing. Strain together flour and baking powder and add in a spoonful at a time to the mixture.


Step 3: Fill the dough mixture into the baking-tin. Put it on a baking tray and then on the bottom rail. Bake for about 40 minutes.


Step 4: Let it cool down in the baking-tin for about 10 minutes. Then remove it carefully. Leave the paschal lamb to cool on a cooling rack for another hour until it’s completely cold. If needed cut the bottom until the lamb stands easily.

Before serving dust with icing sugar and add other bits and pieces if you like.
